For Christmas this year, I bought myself an Instant Pot Mini! What? You don’t buy yourself Christmas gifts? Well I do, and in my defense my Instant Pot Mini was on a crazy Black Friday sale through Amazon – so I don’t feel that badly. Plus, it was the best $40 I ever spent on a kitchen appliance! Mostly because it’s about 8 appliances in one – pressure cooker, slow cooker, saute pan, steamer, yogurt maker and so on! I love a multi-tasking appliance.
It’s mind boggling how much I can do with it! I had been wanting one for months and months now, but considering how many appliances I own (and how many we don’t use), I wasn’t sure I would use it that often. However, we’re using it several times a week and we both love it! I make soups, stews, artichokes, tacos, oatmeal… honestly I haven’t been disappointed with anything I’ve made yet. My next adventure is going to be making yogurt – I’m pretty excited about it!
The holidays have officially come and gone and let’s be real, we’ve been eating like it’s our job! I’m pretty sure I also gave myself 10 extra pounds for Christmas – not as useful as my Instant Pot, let me tell you. Like most people, we are going on a serious healthy eating, detoxification for the next several weeks. In case you didn’t buy yourself one for Christmas, or Santa didn’t bring you one, I highly recommend in investing in one! Because there are just two of us in our house, I invested in the Instant Pot Mini and it’s the perfect size for us. It easily makes enough for 4 hearty portions which is perfect for left overs the next day. However, I am considering ditching my huge slow cooker and just investing in a regular size Instant Pot – yeah I really love it that much! I also love my Skoo silicone egg poaching cups and vegetable steamer. It seriously makes perfectly poached eggs in 3 minutes and with very little work!
