Easter was always my favorite holiday as a child, even over Christmas! I couldn’t wait to find my Easter Basket!  It was always full of fun little goodies that my mom, I mean the Easter Bunny, would know I would love.  They were never big gifts, but little candies, cutesy pads of sticky notes, a new movie, nail polish… just little fun trinkets that I loved.  Decorating and hunting for Easter Eggs was always so much fun … especially a week later when you find that one egg by smell that was too well hidden.

But really my favorite thing about Easter was getting together with family and having a delicious Easter meal!  My Grandmother always made a spiral ham, steamed artichokes dripping with butter, macaroni salad, mashed potatoes, and some sort of fruited jello salad.  The day after she would make Creamed Eggs on Toast with the leftover dyed eggs and another round of artichokes – trust me it was better than it sounds!

This year, since I’ve been so enamored with my Instant Pot and had such great success using it to make Christmas brunch for the family quick and easy, I’ve discovered the most amazing Easter Instant Pot Recipes!  This way I can still make an amazing meal that will rival my Grandmother’s but have more time to visit with my family.

I’m trying to convince my loving husband that I need one of these gadgets for my for the kitchen, I think if I throw some of these recipes in lunch he may get the hint. They look amazing. Do you think they could easily be converted to a slow cooker ( while I wait for my instant pot)?

You know that’s a good question. I think the meat recipes definitely could!

Even though the instant pot can be a slow cooker – I still love my crockpot!

We love one pot meals, and this looks like a great list of recipes. In our small Manhattan apts, space is limited, so one pot meals are great.

Don’t I know it! I lived in NYC for 10 years. In one of my favorite apartments, my kitchen was so small you had to side step through it.

You have quite an amazing collection of recipes there. I am here thinking about the pot roast I just seen above, yum. I haven’t gotten a instant pot yet, although, I am checking out what can and can’t be done with it through everyone else’s trials and I have to say it looks pretty sweet.

I’ve had success with everything I’ve done in it except pork. I can’t get the timing right on it and it ends up a little dry or tough. But I haven’t given up yet.

Ohmygosh, I just got an InstaPot for my birthday and I’m dying to give it a try! But where do I start? Corn chowder. Butternut Squash Risotto. Frittata with Spinach and Mushrooms. Key Lime Pie, really? Key lime pie is my hubby’s favorite. I’m going to start with the corn chowder tonight.

I had no idea I could even make half of these items in my instant pot! We love artichokes and it’s a pain to steam them so I am definitely trying those!
