We take brunch very serious in our house. Lazy Sunday mornings are our favorite few hours of the week. We lounge about on a mountain of pillows on our bed, under a pile of little dogs, and chat over a pot or two of coffee while watching the news. At some point, we toss some bacon into a skillet and whip up some eggs. Usually, my boyfriend is the egg chef in our house, but now and then I manage to pull something special special out of my repertoire. This Dutch Baby Pancake is our special Sunday treat that we both look forward to, especially when we have some fresh berries on hand.
I remember the first time I had an eggy buttery, rich dutch baby pancake. When I was about 9, our neighbor Suzy had my family over for brunch. She served this huge, amazingly puffy, pancake dusted generously with powdered sugar with a plate of lemon wedges and warm syrup on the side. It was so deliciously exotic to me; I had never seen anything like it. It wasn’t like a heavy floury pancake, it was light, eggy, buttery, and exotic! It has remained one of my favorite brunch dishes for 30 years now. I love to watch it puff and grow in the oven, until it crisps on the edges and reaches it’s highest peak! It’s so beautiful and satisfying at the same time.
You can certainly serve a dutch baby pancake with maple syrup, but for me, maple syrup is far too pedestrian for this special pancake. Traditionally, I’ve had them with powdered sugar and lemon juice, which is nice, but a little too sweet for our taste. Sugar Free Lemon Berry Butter Syrup is the perfect compliment to this unique breakfast. It’s sweet and tart from a mix of summer berries, rich with butter, and has just enough lemon zing to push this incredible pancake into the phenomenal category. It’s also versatile, fresh berries and frozen work, and any mix of berries will do!

Simple Strawberry Rhubarb Compote


- 4 eggs
- 2/3 cup flour
- 2/3 cup milk
- pinch of salt
- 1 tsp of vanilla
- 1/4 cup butter, cut into cubes
- Sugar Free Lemon Berry Butter Syrup or Simple Strawberry Rhubarb Compote
- Preheat Oven to 425. Place 9 in Cast Iron Skillet
, pie dish
, oven safe frying pan, or even a casserole dish, in the oven during the preheat.
- Mix together eggs, milk, flour, salt, and vanilla in a blender
or in a bowl with a hand mixer on high speed until fully mixed, no lumps. I use a hand blender
, which works perfectly.
- Once the oven is preheated, add the butter to pan, close the door and let it melt. Once your butter has melted, remove the pan. Carefully swirl the butter so that it coats the sides.
- Pour your batter into the hot pan, and put it back in the oven.
- Bake for 18 - 20 minutes, or until your pancake is tall and puffy and golden brown on the edges.
- Serve immediately, before it deflates. Serve with Sugar Free Lemon Berry Butter Syrup or topping of your choice.
