Springtime means incredible vegetables and fruits have finally come back in season after the long winter doldrums. Asparagus is my FAVORITE springtime vegetable! And right now it’s on sale everywhere at the grocery stores. I will come home with bundles and bundles of them and toss them into everything… pasta, scrambled eggs, salads, on the grill! I could eat them every day.
Despite my current love affair with asparagus, I actually hated it growing up. It was always served grayish and overcooked in my house – sorry Mom, but it’s true. She was known, and still is, to eat it out of can – yuck!
It wasn’t until I was 18 and a friend of mine was steaming a huge batch of asparagus with furikake and sea salt sprinkled on top that he convinced me to try it, quite begrudgingly actually. And it was amazing!! Life changing!! It was bright green, crisp, and delicious; nothing like the gray mush I was used to. I was hooked after that. I’ve been an asparagus eater ever since.
Asparagus is actually part of the lily family as is garlic and onions. We’re actually eating the blooms of the bulb – and they are delish! Despite asparagus making your pee smell temporarily unpleasant, asparagus is incredibly healthy! It’s rich in vitamin K, C, A, B1, B6, and E. It’s an excellent source of fiber, it helps with urinary tract health, and it’s full of antioxidants! Plus, and I did save the best for last, it is considered an aphrodisiac! Heeeeeeey…

Interesting ideas! I had no idea that there are so many ways (and probably much more) to cook asparagus. I’ve eaten it a couple of times but I have never tried cooking it. Maybe I should try some day? 🙂

How fun is this! I’m almost embarrassed to admit that I’ve only ever roasted asparagus. I’ve got some work to do, haha! Maybe I’ll start with pickling a jar…they would look extra cute in bloody marys! 🙂
They are really good in bloody marys! Roasted or grilled are my favorite ways to make it. Super fast, easy, and delicious!
