My boyfriend is a Type 1 Diabetic, and prior to us dating, I really never cooked with sugar substitutes. There are quite a few decent sugar free products out there, but it’s not the same as a homemade dessert or sweet. He enjoys sugar free maple syrup, but all of the sugar free fruit syrups are… well, not so great. So I’ve been challenging myself to create some amazing sweets for my sweetie that are okay for him to eat, like this Lemon Berry Butter Syrup!
This Sugar Free Lemon Berry Butter Syrup comes together in just a few minutes and keeps in the refrigerator for several days. You can use fresh or frozen berries, and I find any variety of berries work. The real key ingredient in this recipe is the lemon… it brings out the brightness of the berries and adds a little zing to balance out the sweetness. It’s just perfect! Serve it up on a Dutch Baby Pancake for an impressive and unbelievably delicious brunch!

Sugar Free Patriotic Pretzel Salad Dessert


- 2 cups mixed berries, blueberries, raspberries, halved cherries, sliced strawberries, fresh or frozen
- 1/2 lemon juice
- 1/2 lemon zest
- 1/4 cup Splenda
- 6 Tbsp butter, salted
- 2 Tbsp water
- In a small sauce pan, combine fruit, Splenda, butter, and water.
- Cook over medium heat until bubbling, stirring occasionally.
- Turn down to low and allow to simmer for 5 minutes.
- Add lemon zest and lemon juice.
- Cook until desired consistency reached, about another 10 minutes.
- Serve on top of Dutch Baby Pancake, Waffles, French Toast, or Crepes!
- This will keep in the fridge for up to a week. Just heat and serve!
